I am only using my blog for testimonials. Is there a way to change the name from "Blog" to "Testimonials"?

Almost all strings in nopCommerce are configurable through Localization. You may edit them under Configuration -> Languages. :D

Usually if you want to make a wholesale change like that it's easiest to filter on the Value field and set it to Contains and "blog". Then you can just change all of those to testimonial.
