Can you set a product to ONLY be visible to specific customer roles?

Yes. You have to set ==>"Customer roles"

As said above assign while adding or editing a product (in advanced mode) the specific customer roles to Accesl Control List as explained here: https://www.nopcommerce.com/boards/t/19389/acl-on-categoriesproductsmanufacturers-and-multi-stores.aspx
