Andrei, if I got it right, the 4.1 is (almost?) ready, you were only waitiong for this release, so are we just some days away from 4.1 ?
(I am asking this because right now I am beginning with a lot of customization into 4.0, so I could be doing it right into 4.1)


And we have a new project coming up which i would love to start on 4.1 instead of 4.0.

There is not such a bottleneck of 200 concurrent users. We have managed peaks over 300 user with a store with over 5K products. It is a matter of assigning enough computing resources. Version 4.1 will be significantly faster, Microsoft states that ASP.Net Core is about 20 times faster.
