What's the comman files must save while republish ?

am asking about which files saves while get new publish to don't lost anything
like webconfig , appsetting , .... etc
as some times i lose configuration on plugins some on pages like checkout

\App_Data folder contains
installedPlugins.json
datasettings.txt

Most other settings (including for plugins) are in the database (Setting table)

but when i copy plugins to new build i found all setting that i do before cleared

Are you using a new database / re-running the nopCommerce install?

no i just rebuild and replace appsetting and webconfig
