The theme I'm using has the Product image "float" centre screen as the user scrolls down.
How do I stop this?

It would be easier to help you, if you show us a product page where it happens. I understand that you mean that the picture with scrolling the screen remains visible to the user all the time? If yes, it can be done with position: sticky; in css, but it's hard to predict without access to the store. You can also use the browser inspector. Click the right mouse button on product picture and click the "Insepct element" option. It will open a console and inspector. In the right part of screen you will see a css rules applied to this element. You can change the values of it, maybe it will be easier for you to find the issue.
