differences between pavilion theme control panel and normal control panel

hello every body

when i have tried pavilion theme control panel and the nopcommerce control panel "the defauklt one" i have  found differences between them like i cant manage orders in pavilion theme control panel also i cant manage currencie.
also there are differences in dashboards

so is this only for the demo one cause till now i did not buy it for that reasons
and regarding the dashboard is it customizable like if i want to show online users , orders from where come
or if i can customize the dashboard like this dashboard "opencart"

This could be because of the role and access restriction on the pavilion's demo website.
All the options should be available and similar in both the case in the admin panel with the proper role.
And I think it will be better if you directly contact the vendor regarding your query on the pavilion theme as it is more likely that you will get a quick response from their support team.

The dashboard customization to add more statistics is not available out of the box but you can customize/expand it by creating a new plugin. Check the official documentation for more information on the plugin development
