Stick to the "Open Source" strategy and do whatever you like after this. What's great about this new theme is that you get the PSD's with your purchase. You do not need the code of our plugins to extend them as long as you are aware of the nopCommerce plugin architecture and the MVC extensibility points. In addition the plugins come with their Razor views open to modifications and this is what you will need to change 90% of the time. For the remaining 10% you get our support and upgrades.
You are a developer and this is why you like to have everything under control, confide in the code only (this is how I think too). But when it comes to doing business quickly and cost effectively, our customers confide in our products and mostly the support that comes with them. We cannot offer them support and upgrades if we ship them the code.
And I think they are doing a pretty good job with their online shops. Just have a look at some of them:
