You must apply role - vendor. Then your customer will be able to modify only his own products.

Why Vendor? should I control the ACL of the category?

Is not the vendor, my purpose is to let a person to admin everything for their website only, I have few store(Multi store, is that possible for each one admin themselves?

If I understood correctly, no. There is no way to add separeted admin for each store only.
