Can you set these on a per store basis? I don't see that it works like the other multi-store settings.
EXAMPLE: I want to call the login field "Email" on site and "Username" on another.

Those are string resources that can be changed in admin>configuration>languages>View string resources. This can be done per language and not per store, but here is the hack: you can define a different "language" per store (in admin>configuration>languages>add >and store tab); ie. English (base language), "English2" for Store2. Then change just the resources you want to differentiate in Store2
