How can I Disable SKU from being shown on customer receipt PayPal Commerce

I do not want the customer to see the SKU(s) on their paypal receipt, is there a setting in admin that I can disable this?

The SKU is showing as Item ID in paypal transaction.

There is no such setting. You can modify the plugin to disable SKU by deleting or commenting out this line of code.
