how can I do to let the customer buy only one product for certain product I would like to choose?

While adding/editing a product you can set a "Maximum cart quantity"

Thanks for the answer. Maybe I didn't explain well.

I would like that this product have to be the only product in the cart. No other product can be added with it.

Ok. I think that requires customization work.
