I imported thousands of parts, and for some reason, a lot of them did not get SEO url's assigned.
Is there a way to regenerate SEO url's for all the products and whatnot?

You can follow one of the below approach
1. If only for few products Search Engine Friendly page name is not updated then you could edit those products and save.
2. You could use product Export and Import Feature, Export the products to Excel sheet update 'SeName' column field for all the products and import updated Excel file with out changing SKU column value. nopCommerce update the product information if Same SKU code exists.
3. Update using SQL Query update 'UrlRecord' table use Product Id as 'EntityId', 'Entity Name' as 'Product' and Url name is updated in 'Slug' column. you could use product Name to generate 'Slug' column value.
