Multipe store only one theme?

I'm planning to open a second store, but I don't understand how to use a different theme. Is it possible? How?

Note: Select store first then select theme and then save.

Would multi-store with a different theme for each store slow down the websites? Or would there be no impact on speed?

It should not slow down the speed since a theme will be downloaded only when requested.
