Editing a saved Product Item

Hello, please can someone help me on this issue.
Is there anyway to add SKU # and stock levels after the product has been entered and saved.
The only option I have is to add a New Product Variant. The already saved product is only on View Mode. Is that by design?

when you initially save a product, all the price/sku/weight/stock info is moved into the 'unnamed product variant' - you can edit this information and you can add more product variants
