Hi there
When an order is placed, does it send an email of the order out to the customer or the fulfillment house / default email account? I can't seems to find a place anywhere to specify where an email address can be used for notification. Any ideas?

Go to Configuration, then Common settings. Then Mail Settings. Here you can set your admin email.
But wait several days for the next release (order notification system was fully rewritten). New message templates were added.

So presently the system doesn't send any notifications out when an order is placed? Will that be resolved soon?

Now the system sends notifications when an order is completed. That'll be resolved in the next release
