How I can change admin e-mail address, and how some user-cutomer can change e-mail address?

You can't change a customer e-mail address.

If you want to use a different account for administering your store from the default ([email protected]), then register for your own store, log in as [email protected], make your new account an admin account, then delete the default [email protected].
