How about having the option to dispaly a date/time stamp stating "Last updated" any time a blog post, forum post, or comments are edited?  Some forums even have "Reason for edit" field.

Yes.
But instead of making something specific and only for one product, the best approach would be to create a web- service that any application could use.

I have a suggestion:

Please allow website administrator to customize Order No appearing in invoices, forms etc.

Some company may like to have Order Number like:

e.g 1.
CMP - 1000
(CMP -- some short, 3, 4 characters, prefix for company name)
1000 is the actual Order number.

e.g. 2.

CMP-100515-1050-1000
(CMP - Company prefix, 100515-105033 showing date + time in format (year+month+day - hour+minute)
1000 is the actual Order number

Showing only 1, 2,3... for Order number does not look professional.

Also I would suggest that if possible, it will be good to add more client side scripting like JQuery etc. in coming versions to avoid redundant postbacks to server.

Will be updating ahead if I get more ideas. But so far so good work from nopCommerce Team!

Quick Order form, where customer can enter product# and Qty for multiple products on a single page and proceed for checkout

User controls in \modules\ can be recyled for both shopping cart and  its \administration\ site?
for example, if I customise customerInfo.ascx, i have to do it in both. I haven't checked both folders but if there are few shared, then nop don't need to worry about it.

Hey I just received the notice that version 1.60 is coming out in 8 days! This is wonderful news!

Just a thought though: I have been translating the resources (Localization) file into Portuguese-Brazil and noticed that there are several duplicate entries but for different pages/functionalities. Maybe this is too late to ask for version 1.60 but do you think that maybe you could make the localization a bit easier to translate? (XML editing is tedious work as you probably know). Not having to translate 10 times the word "SAVE" would be nice ;-)

This is a nice-to-have feature though, because the suite in itself is great!
