I know that I can't just use the GUI and export functionality to do that many, so how do I go about getting this data?

A migration company told me to give them the FTP information which I've always used to edit the site, but not to mess with the Database.  My DB is housed in Azure so I'm assuming they would need access to our azure account and Visual Studio or something?

Just use SQL. Export your Azure SQL Database to .bacpac, and send them the file. They should be able to restore it on their machine, and start digging the data. :)
