Edit Product Attributes on Order

Hello,

I need to be able to adjust product attributes on products within an order. Sometimes customers will enter data incorrectly (textbox) or select options for which they aren't qualified and we need to be able to change these options. What we want to change does not affect the order cost, they're mostly statistical data we have to collect when people order certain products.

Can someone point me in the right direction?

I am afraid this is not supported out of the box. A number of customization is needed. :)
