Reporting Question

If I delete a color or size for an item that is sold out, will the system delete the item from the order summaries that have already completed or just from the public site?

No, I don't think so. Orders are stored in a different table. Changes made AFTER and Order will not be reflected in the Order (and it makes more sense to work this way).
