Is there any way of publishing 'Deal Of The Day'  in Nop 2.8 ?

There is not such a feature out of the box. Could you explain your needs more detail?

I want to bundle some products together and take it as a deal for the day/week in addition to the existing functionality that we have in Nop 2.8.

"Deal of The Day", week, etc. is something that I would use often.

Something like this, yes.  However, this app states:  "* This plugin doesn't support multi product variants."  I'm new to nopCommerce, so I'm not sure what this exception/warning means.

that means it supports single SKU only.
if a product has more than one SKUs, it doesn't support
