Is it possible to log the activity on what the user search?

Hello-

There is already a built-in feature. In your admin area, on the dashboard, you should see a box that says:
Popular search keywords

You can also use Google Analytics to measure the search term usage by looking at the
BEHAVIOR >> SITE SEARCH >> SEARCH TERMS
It allows for filtering by date range and other things as well.
