What I noticed when using Redis in a production environment:
The bandwidth between the web server and Redis was getting maxed out, resulting in Redis call timeouts. This resulted in errors popping up in other places within nopCommerce.
It creates a bit of a cascading collapse that seem unrelated.
Try running without Redis and see if you are getting the same errors.
