Is it true that the new webservices api plugin only supports some Order related funtctions? I would like to be able to synchronize products from 3rd party system, so maybe some Product related api functions would be nice? (it seems that I can execute some custom SQL queries directly)

Right. But it'll be really hard to implement and support all possible operations (hundreds). This plugin demonstrates how Web Service API can be created. So if you need to add some new methods, just extend the already implemented plugin.

yes, you're right about all the options... the extensibility of the plugin is a great thing though!
